so, how is the wine made?

I have done heaps of culture work in the past and I sure would like to know how this is done.

is the PH in the juice not to acidic?

does it need to be a specific type of grape juice?

is the culture started from multispore or from tissue from a wild specimen?

i also would like to know theese answers as well
